Ever get a sudden craving for chocolate that simply CANNOT wait? (See HERE for more on that subject OR if you want to be super entertained by my story telling abilities.)
Anyways. Lets talk brownies. The good, the bad (Is there any?) and the ugly (Again, none.)
So really we’re just talking the good stuff about brownies.
Warm, chocolately, chewy, ooey gooey brownies.
The only downside to brownies? Waiting for them to be done. I mean, who has that kind of patience on a regular basis? Certainly not me. Well guess what? I’m here to tell you that you’ll NEVER have to wait for brownies again! Okay, maybe not NEVER. I’m not magic.
But I do have a solution to this horrible problem and I like to call it :
The 1 minute mug brownie.
And hey, its paleo too in case you care! (ALSO: refined sugar free, packed with healthy fats and protein!)
*DISCLAIMER* 99% of the time I try to avoid the use of the microwave. I do not recommend using a microwave on a regular basis as it denatures proteins and uses radiation to heat foods. This is an occasional treat for those in need of a quick chocolate fix!
I honestly can’t remember whether it exploded all over the edges like that while cooking or if I just got reeeally excited while stirring…
probably the latter.
- 1 egg
- 2 tbsp raw cacao powder
- 3 tbsp almond flour
- 2 tbsp maple syrup
- 1 tsp vanilla
- In the mug, whisk the egg with a fork until beaten. Next, add the maple syrup and again stir to combine.
- Next, add the vanilla along with the almond flour and cac stir everything
- Start by whisking the egg in the mug with a fork. Add each ingredient, stirring well between each addition (some lumps are okay.) Toss it in the microwave and cook for 1 minute. Microwaves are tricky because everyone’s is different so if it still looks really runny in the middle then zap it for another 30 seconds. Eat it just like that or throw some coconut whipped cream on top and serve!
