- 1 ripe banana
- 2 pastured eggs
- coconut oil for frying
- coconut whipped cream
- fresh berries
- maple syrup
- almond butter
- In a blender, add the ripe banana and eggs and blitz until smooth and creamy. Alternatively, you can mash the banana and whisk the eggs in. I trust your judgement
- Heat coconut oil in a pan over medium heat. Add 1/4 cup of the batter and fry for 1-2 minutes each side or until golden.
- Top with coconut whip, coconut yogurt, maple syrup or fresh berries
