INGREDIENTS
- 12-15 cherry tomatoes
- 3 small garden cucumbers sliced
- a cup of organic feta, cubed
- DRESSING:
- 1/4 cup cold pressed extra virgin olive oil
- 2 Tbsp red wine vinegar
- 2 tsp dried parsley
- 2 tsp dried oregano
- Sea salt
- Cracked black pepper
METHOD
- Assemble the green salad bites on toothpicks with the cucumber slices as the base, feta in the centre and the tomato halves on top.
- Arrange on a plate and drizzle with the dressing right before serving. Enjoy!
