Ok first of all, I just gotta say it – HOW cute are these?!
I don’t think I need to write anything else about them because look at those babies! Who wouldn’t wanna make them? Great appetizer, fun lunch, perfect snack – they do it all.
I used organic sheep’s milk feta from a local cheese store and my life is changed. The creamy sharp feta paired with the tangy tomatoes and crunchy cucumber are better together than apart – preferably all in one bite!
12-15 cherry tomatoes
3 small garden cucumbers sliced
a cup of organic feta, cubed
1/4 cup cold pressed extra virgin olive oil
2 Tbsp red wine vinegar
2 tsp dried parsley
2 tsp dried oregano
Cracked black pepper
Assemble the green salad bites on toothpicks with the cucumber slices as the base, feta in the centre and the tomato halves on top.
Arrange on a plate and drizzle with the dressing right before serving. Enjoy!
