Spicy & Creamy Cold Sesame Noodle Salad

This salad is a staple in my house. I often make it when I’m having friends over for dinner in the summer because it can be made ahead of time and served cold. IDK about you but I don’t love cooking once my friends have arrived so this makes it suuuper easy.

It’s also an awesome potluck dish because it transports so well. All in all this is a really easy recipe that tastes like it took a lot more effort – I am a BIG fan of recipes like this.

The flavours are a mixture of fresh and vibrant with a creamy spice kick. The sauce tastes delicious as-is but if  you have the opportunity to get your hands on a 5-spice mix blend I highly, highly recommend you do it. This spice blend is my secret ingredient whenever I make asian-style dishes. The fragrance alone is amazing and the nutty, savoury flavours add a depth to all your dishes. I’m obsessed with it if ya can’t tell. Not to mention all the spices used are beneficial for digestion and lowering inflammation.

INGREDIENTS

  • 1 package rice noodles

  • 1 cup shredded carrots

  • 3 large bok choy, sliced thinly

  • 1 cup shredded raddiccio or red cabbage

  • 3 green onion

  • SAUCE

  • 1/2 cup tahini

  • 1/2 cup water

  • 3 tbsp sesame oil

  • 3 tbsp tamari

  • 1/3 cup rice vinegar

  • 2 tbsp maple syrup

  • 3 tbsp miso paste
  • 2 cloves garlic, minced

  • 2 tablespoons ginger, minced

  • 3 tbsp sriracha or spicy chilli paste

  • salt to taste

  • optional: 1 tsp 5 spice seasoning (mixture of cinnamon, cloves, fennel, star anise, and Szechwan peppercorns)

METHOD

  • Prepare rice noodles according to package directions. Rinse under cold water immediately and use scissors to break noodles into smaller/bite sized pieces
  • In a large bowl, whisk all sauce ingredients together. Depending on your tahini you may need more or less water. Don’t be afraid to add more or less of any ingredient until it tastes the way you like it. This is a flexible sauce recipe!
  • Toss noodles together with shredded veggies and sauce using tongs until sauce is evenly distributed and veggies/noodles are combined
  • Refrigerate and serve cold!
