i got a lot of requests for this recipe the other night (it’s one of my favourite weeknight dinners so here we go!)🥰 vegan ‘butter CHICKPEAS’ how-to: sauté 1 chopped white onion in some coconut oil for 2 minutes. add 3 tbsp butter chicken spice blend (i used a spice mix from @officialfarmboy OR you can mix 2 tbsp garam masala, 1 tbsp coriander, 1/2 tsp chilli powder and 1 tbsp cumin). once fragrant, add 1 1/2 cups strained tomatoes and simmer for 5-10 minutes. next, add in 1 can of full-fat coconut milk and 1 large can of chickpeas and simmer for an additional 5 minutes. season with plenty of salt and a squeeze of lemon! a few minutes before serving, you can toss in any veggies you like (i threw in some green beans for 1 minute at the end of cooking). i served this with turmeric rice, massaged kale and a dairy free raita made of coconut cream, chopped cucumber and fresh mint. enjoy! #stellarhealth
